THE JOB: The Executive Chef is responsible for providing strategic leadership and operational oversight for the property's culinary team, ensuring alignment with the MGM Resorts brand. This role collaborates with the Center of Excellence (COE) for Food & Beverage Strategy to drive culinary excellence across high-volume and gourmet dining outlets, support kitchens, banquet operations, in-room dining, and stewarding. Additionally, the Executive Chef partners with external venues to enhance guest experiences.
THE DAY-TO-DAY:
Lead the implementation of Food & Beverage strategic initiatives, ensuring they are effectively integrated into daily culinary operations and sustained over time. Work closely with the F&B COE Culinary team to develop and execute new initiatives, programs, and concepts that enhance the property's culinary offerings. Ensure compliance with all policies, operating procedures, training programs, directives, menus, work schedules, and regulations for the culinary team. Interview, hire, train, supervise, and mentor property chefs to maintain operational efficiency and drive employee engagement through coaching, training, and development. Continuously assess customer feedback and market trends, providing recommendations for menu updates and adjustments to align with guest expectations and competitive demands. Utilize COE resources to effectively manage food costs (COGs), optimize labor, and control expenses while ensuring profitability and operational efficiency
THE IDEAL CANDIDATE:
The ideal candidate is a seasoned culinary leader with a bachelor's degree or equivalent experience. Would have 4+ years of prior relevant experience. Expertise in large-scale, luxury resort environments with multiple outlets. They possess a deep understanding of culinary concept planning, production, presentation, service, and operational controls to maintain excellence across diverse restaurant concepts. This individual excels in strategic process development, ensuring operational efficiency while upholding the highest food quality standards. They have a proven ability to collaborate and influence at all levels of an organization, fostering strong partnerships across departments.
