Overview

The Corporate Director of Restaurants & Bars provides strategic leadership, operational oversight, and functional support, training and concept development for all food and beverage outlets across HEI's portfolio, including hotel restaurants, standalone dining concepts, bars, lounges, nightlife venues, room service, and banquets. This role is responsible for ensuring consistency in execution, financial discipline, service standards, and concept relevance across diverse brands and markets.

Concept Development & Programming

  • Supportthedevelopment, refinement,andevolutionofrestaurant, bar,andnightlifeconceptsacrosstheportfolio.
  • Partner with culinary,beverage, design,andmarketing teams to ensureconceptsareoperationally sound, market-relevant,andbrand-appropriate.
  • Advise on programming, activations, menus,andpromotions that drive guest engagementandlocal market relevance.

PortfolioOversight&StrategicSupport

  • Providecorporateoversightandguidanceforrestaurantsandbarsacrosstheportfolio,supporting on-property teams in achievingoperational, financial,andguest satisfaction goals.
  • Act as astrategicpartner to propertyleadership, ownership,andcorporatestakeholders onfoodandbeverageinitiatives.
  • Supporttransitionhotels by implementingHEItools, systems,andstandard operating procedures, stabilizing performance during periodsofchange.

Financial Performance & Reputation

  • Providestrategicoversightandguidance onforecasting, budgeting,andoverall financial performanceacrossrestaurants,bars,lounges,roomservice,andbanquets.
  • Partner with propertyandculinaryleadershiptosupportlabor,food,beverage,andoperating cost strategies, ensuring financial discipline while maintainingserviceandquality standards.
  • Collaborate with on-property teams to inform revenue-driving strategies,includingconcept positioning, pricing frameworks, programming,andmarket alignment.
  • Review guest sentiment, online reputation metrics,andGSS performance, advising on action plansandbest practices that drive continuous improvementacrosstheportfolio.

Training, Talent & Standards

  • Leadthedevelopmentandexecutionofportfolio-widefoodandbeveragetraining initiatives, establishing standards, tools,andbest practices thatsupporton-property teams.
  • Supportleadershipdevelopmentandsuccession planningforfoodandbeverageleaders.
  • Ensure brand standards, safety protocols,andregulatory requirements-includingallfederal, state,andlocal liquor laws-are consistently followed.
  • Promote a cultureofaccountability, collaboration,andcontinuous improvementacrossallfoodandbeverageoperations.

Systems, Compliance & Quality Assurance

  • Ensure effective useofPOS systems, reservation platforms (OpenTable/Resy),andreporting toolsacrosstheportfolio.
  • Oversee sanitation, maintenance,andasset protection standards withinfoodandbeverageoperations.
  • Ensure compliance withcorporatepoliciesandallapplicable regulations.

Qualifications & Experience

  • 5+ yearsofprogressiveleadershipexperience infoodandbeverage, withmulti-unit,corporate, or regionaloversightstrongly preferred.
  • Proven experience withstandalonerestaurants,nightlifevenues,bars, or concept-drivendiningoperations.
  • Demonstrated successsupporting on-property teams rather than solely operating at unit level.
  • Strong financial acumen with experience in budgeting,forecasting,andperformance analysis.
  • Effective leaderandcommunicator withtheability to influenceacrossdiverse teamsandstakeholders.
  • Highly organized, self-directed,andcomfortable working in fast-paced, multi-property environments.
  • Proficiency in MicrosoftOffice, POS systems,andreservation platforms.
  • Willingness to travel extensively (up to 100%).

Compensation

Salary Range: $130,000.00 - $140,000.00 Annually Tipped/Service Charge Eligible? No Discretionary Performance Bonus Eligible? Yes
